Caprese salad is a simple Italian salad, traditionally made of sliced fresh mozzarella, tomatoes, and basil. This version is extra summery and as fresh as it gets.

    INGREDIENTS

    • 3 x Valencia Oranges
    • ¼ Cucumber
    • 6 x Strawberries
    • 125g Mozzarella Cheese
    • 1 Handful Fresh Basil
    • Olive oil
    • Balsamic Vinegar
    • Salt
    • Freshly Cracked Black Pepper

    INSTRUCTIONS

    1. Using a knife, remove the skin from the oranges and slice them into rounds.
    2. Remove the leaves from the strawberries and slice them into quarters.
    3. Slice the cucumber into thin rounds.
    4. Slice the mozzarella cheese.
    5. To assemble, arrange the oranges, cucumber, strawberries, and mozzarella on a plate. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper. Add a generous amount of freshly torn basil leaves.
    6. Best served immediately.
