These Cheesy Onion Chips are what happens when snack cravings meet an onion haul in your Wonky Box. With nothing but a few humble ingredients - grated parmesan, fresh onion slices, and a dusting of herbs - they bake up golden, crispy, and wildly moreish. The perfect low-effort crowd-pleaser for movie nights, side dippers, or fridge raids. This is the kind of recipe you keep in your back pocket for when life hands you onions and not a lot of time.

INGREDIENTS:

  • 120g parmesan cheese
  • 2–3 small onions
  • ½ tsp mixed herbs
  • Olive oil

INSTRUCTIONS:

  1. Preheat your oven to 180°C (fan).
  2. Thinly slice the onions into rounds - you’ll need about 16 slices in total.
  3. Line a medium-sized baking tray with baking paper.
  4. Grate the parmesan cheese and spread it evenly across the tray, right to the edges.
  5. Arrange the onion slices on top of the cheese in rows (around four per row).
  6. Lightly brush each onion ring with olive oil and sprinkle with the mixed herbs.
  7. Bake for 10–11 minutes, checking at the 7–8-minute mark. You’re aiming for golden, crispy cheese.
  8. Let them cool slightly, then slice into portions.
  9. Serve with mayo or your favourite dipping sauce.
