Crumbed cauliflower burger recipe

Crispy, warmly spiced cauliflower steaks meet sweet-tangy beetroot marmalade in this crave-worthy vegetarian burger. Topped with creamy avocado, it's a flavour-packed twist that might just become your new favorite.

INGREDIENTS:

Beetroot Marmalade

  • 300g beetroot, peeled and diced
  • 200g brown or red onion, sliced
  • 15g butter
  • ½ cup brown sugar
  • ½ cup apple cider vinegar
  • 1 tsp cumin
  • 1 clove garlic, crushed

To Assemble

  • 4 burger buns
  • Mayonnaise
  • Lettuce
  • 2 small avocados, sliced

Crumbed Cauliflower

  • 1 head cauliflower
  • 1 cup  plain flour
  • ½ cup cornflour
  • 1 tsp garam masala
  • ½ tsp cumin
  • ½ tsp paprika
  • ½ tsp coriander powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper, to taste
  • 1.5 cups milk
  • 1.5 cups breadcrumbs
METHOD

Make the Beetroot Marmalade:

  • In a pot, melt the butter over medium heat. Add the sliced onions, diced beetroot, cumin, and garlic. Sauté for 10 minutes, stirring often.
  • Add the apple cider vinegar and brown sugar. Reduce the heat to low and simmer for about 1 hour, stirring occasionally, until the mixture thickens and most of the liquid has evaporated. The marmalade should be sticky and jam-like. Set aside to cool.

Prepare the Cauliflower Steaks:

  • Remove the outer leaves from the cauliflower.( Find ways on how to use cauliflower leaves on our website here) Turn the cauliflower stem-side up on a cutting board and, using a sharp knife, slice it into 2-3 thick steaks. Halve each steak through the stalk. Reserve any leftover florets for another use.
  • Season the cauliflower steaks with salt and pepper.

Coat the Cauliflower:

  • In a bowl, combine the flour, cornflour, garam masala, cumin, paprika, coriander, garlic powder, onion powder, salt, and pepper. Mix well.
  • Gradually add the milk to the dry ingredients to create a smooth batter.
  • Dip each cauliflower steak into the batter, ensuring even coating, then transfer into breadcrumbs and coat evenly. Repeat with all steaks.

Cook the Cauliflower:

  • Oven: Preheat the oven to 200°C. Place the crumbed cauliflower steaks on a lined baking tray, drizzle or spray with oil, and bake for 30-35 minutes, turning halfway, until golden and crispy.
  • Air Fryer: Air fry at 200°C for 20-25 minutes, turning halfway through.
  • Frying (Optional): Heat oil in a pan and fry the steaks for 6-8 minutes until golden and crispy. Drain on paper towels.

Assemble the Burgers

  • Spread mayonnaise on the toasted burger buns. Layer with lettuce, crumbed cauliflower steaks, beetroot marmalade, and sliced avocado. Top with the remaining bun and serve immediately.
