Get into the Halloween spirit with these eerie yet delicious Mandarin-CarrotJellies – perfect for crafting with the kids or adding a spooky twist to your special occasion. The blend of mandarins and tangelos creates a bright and tangy flavour, while the addition of carrots adds a subtle earthy sweetness. Pick up these silicone moulds from a few shops in town, but for extra creative ones, search on the internet.

Feel free to experiment with other fruits and veggies, such as strawberries, pumpkin, other citrus, or even greens like spinach, for unique and vibrant variations. Adjust the gelatin or Agar Agar accordingly to suit the water content of your chosen ingredients. It's a playful, vegan-friendly treat that's as fun to make as it is to eat!

Ingredients:

  • 3 mandarins, peeled
  • 1 carrot
  • 1 tangelo, sliced
  • ½ tsp Agar Agar (vegetarian- and vegan-friendly gelatin) or use regular gelatin (1.5 tsp)
  • 1 tablespoon honey

Instructions:

  1. Peel the mandarins or tangelo. Wash and chop the carrot; no need to peel the carrot.
  2. Place the mandarins and tangelo into a blender and blitz until smooth. Place a sieve over a pot. Pour the mandarin and tangelo mixture into the sieve. Use the back of the spoon to push the mixture through the sieve to remove the lumps.
  3. Add in the honey and mix through. Sprinkle the Agar Agar or gelatin over the mandarin and tangelo mixture and set aside for 2 minutes.
  4. Cook on low heat for 3-4 minutes, stirring constantly.
  5. Using a clean pipette, transfer the orange and carrot jelly into the moulds. Fill all of the moulds and allow them to set for 3-4 hours in the fridge.
  6. If you don't have a mould, pour the mixture into a glass dish, allow it to set, and portion it with a knife.

  8. Store in an airtight container in the fridge for up to 3 days.
