This recipe combines thinly sliced cabbage and grated carrot and is a delicious dinner. Ensure you have that dollop of mustardy mayonnaise for the perfect combination.

INGREDIENTS:

  • ¼ head of cabbage
  • 1 small onion
  • 1 cup grated carrot
  • ½ cup flour
  • 1 tsp baking powder
  • 1 tsp cumin
  • 2 eggs
  • ½ cup milk
  • Salt & pepper
DIJON MUSTARD MAYO:
  • 3 tablespoons mayonnaise
  • 1 tsp Dijon mustard
  1. Slice the cabbage thinly and chop it.
  2. Slice the onion.
  3. Grate the carrots.
  4. Place the cabbage, onion, and carrots in a large bowl. Using your hands, massage the cabbage, carrots, and onions together for 2 minutes to soften slightly.
  5. In a bowl, combine the dry ingredients: flour, baking powder, salt, pepper, and cumin. Mix to evenly disperse the ingredients.
  6. Add the flour mixture to the cabbage mixture and mix well to combine.
  7. In a small bowl, beat the eggs and milk together. Add the egg and milk mixture to the cabbage and carrots. Mix well to combine.
  8. Heat a large frying pan with olive oil over medium heat. It's best to cook the fritters in batches. Spoon the fritters into the pan, cooking 3-4 fritters at a time. Cook on each side for 3 minutes until golden brown.
  9. Repeat until all the fritter batter is cooked.
  10. To make the Dijon mustard mayo, combine the mayonnaise and Dijon mustard together.
  11. Best served hot!

Store in an airtight container in the fridge for up to 3 days.
