The beauty of broccoli doesn't stop at the florets! Get saucy with those stalks! Not only are broccoli stalks perfectly edible, they're also packed with nutrients like fiber, vitamin C, and antioxidants.

For this recipe, all you have to do is remove the very bottom of the stalk and then chop and blend the rest with a few other ingredients to create a zingy, green pesto - ready in 3 steps!

This waste reducing sauce is perfect for pairing with fish, chicken, or our favourite, on this Pumpkin and Broccoli Pasta Salad

INGREDIENTS:

  • 1 Broccoli stalk
  • 1 cup fresh Basil leaves
  • 1 Tbsp pine nuts
  • Juice of half a lemon
  • 100ml olive oil 
  • 1 clove garlic 
  • 10g parmesan cheese
  • Salt & Pepper

INSTRUCTIONS:

  1. Remove the very bottom of the broccoli stalk and discard. Chop the remaining stalk into smaller pieces.
  2. Add to a blender along with basil leaves, garlic, parmesan cheese, pine nuts, lemon juice and oil. Blitz until smooth.
  3. Season with salt and pepper to taste, adding extra lemon juice if you’d like more zing.
