The trick here is two trays. Cauliflower and chickpeas want the same spice mix but not the same crowded pan, so they roast separately and both come out with edges on them rather than steaming each other soft. Underneath sits couscous made up with turmeric stock, forked through with parsley, mint, lemon and toasted flaked almonds, with nigella seeds going on at the end where their oniony bite survives. It's a one-oven vegetarian dinner that works warm on the night and cold from the fridge the next day, which is the real test of a grain salad.
