Filling Ideas:

  • Hummus and Roasted Red Peppers: Spread a layer of creamy hummus and add some roasted red pepper strips for a Mediterranean twist.
  • Peanut Butter and Banana: A sweet and filling choice, especially for kids. Spread peanut butter and add banana slices.
  • Cream Cheese and Smoked Salmon: For a more gourmet touch, use cream cheese and smoked salmon, perfect for brunch or special occasions.
  • Tuna Salad: Make a simple tuna salad with canned tuna, mayonnaise, and chopped vegetables for a classic option.

Ingredients:

  • 1 cup oats
  • 1 tablespoon flax seeds
  • 1 ¼ cups soy milk or almond milk
  • 2 cups of greens of your choice (spinach, rocket, kale, watercress, etc.)

Instructions:

  1. Place all the ingredients in a high-speed blender and blend until smooth.
  2. Once blended, let it sit for 5 minutes.
  3. Brush a large baking tray with oil and place it in the oven to heat for 5 minutes. Alternatively, you can bake on a silicone mat.
  4. Carefully remove the hot tray from the oven and pour the mixture onto it. Use a spatula to spread it out evenly.
  5. Return the tray to the oven and bake at 190 degrees Celsius for 12 minutes.
  6. Remove from the oven and allow it to cool.
  7. Gently roll out the mixture with a rolling pin.
  8. Add the fillings of your choice (inspo above). Roll it up tightly, then use a sharp knife to slice it into rounds.
  9. Place the pinwheels into lunch boxes.
  10. Unfilled super green wraps will last in the fridge, covered, for up to 3 days.
