Savoury Flapjacks are the snack you didn’t know your broccoli stalks were destined for. Loaded with grated carrot, broccoli (yes, the stalk too!), oats and cheese, these veggie-packed bites are perfect for lunchboxes, a sidekick to soup, or just an on-the-go graze. This easy vegetarian lunch recipe makes the most of seasonal produce and takes just 10 minutes to prep. A clever twist on classic oat bars - no sugar, just full-on flavour and crunch.

INGREDIENTS:
  • 100g grated carrot
  • 100g grated broccoli (use the stalk too)
  • 100g grated tasty cheese
  • 200g rolled oats
  • 1 tsp mixed herbs
  • 2 Tbsp sunflower seeds
  • 2 eggs
  • Salt and pepper, to taste
  • 30g butter, cut into 6 small cubes
INSTRUCTIONS:
  1. Preheat your oven to 180°C and line a baking tray with baking paper.
  2. In a large bowl, combine the grated carrot, broccoli, cheese, oats, mixed herbs, sunflower seeds, salt, and pepper.
  3. Lightly beat the eggs and add them to the mixture. Mix everything together - using your hands makes it easier!
  4. Spread the mixture evenly onto the prepared tray and press it down firmly.
  5. Dot the cubes of butter across the top.
  6. Bake for 25 minutes or until golden and set.
  7. Allow to cool slightly, then cut into 10 squares.
