Ever find yourself with an onion overload? Turn your unsung produce heroes into this easy Red Onion Marmalade—a must-have condiment that delivers the rich, savoury goodness of caramelised onions with a tangy twist.

The addition of brown sugar brings out a sweet depth, while balsamic vinegar adds a delightful sharpness, creating a sticky, luscious marmalade.

This savoury marmalade recipe is perfect as a topping for burgers, a spread for cheese boards, or a flavourful addition to sandwiches, and sure to become a staple in your kitchen. Store it in a clean, airtight jar in the fridge, and it will keep its deliciousness for up to five days.

INGREDIENTS:

  • 2-3 large red onions (approx. 400g)
  • 30g butter 
  • 1 Tbsp olive oil 
  • 2 cloves garlic 
  • ¼ cup brown sugar 
  • ½ cup balsamic vinegar 
  • Salt & Pepper

INSTRUCTIONS:

  1. Finely slice the garlic and onions
  2. Add the butter and oil into a frying pan. Once the butter has melted, add the onions and garlic and sauté for 10-15 minutes, stirring often, until the onions are soft and golden brown.
  3. Add the brown sugar and cook for a further 5 minutes, stirring often.
  4. Add the balsamic vinegar and bring to the boil. Let boil for 2 minutes, stirring often, then reduce the heat to low and cook for a further 15 minutes until most of the juices have cooked away and the onions are slightly sticky. Keep stirring frequently.
  5. Season with salt and pepper to taste.

Store in a clean, airtight jar or container in the fridge for up to 5 days.
