INGREDIENTS:

  • 8 pitted dates, chopped
  • 2 cups celery, thinly sliced
  • 2 Tbsp celery leaves
  • 1 ½ navel oranges or 2 mandarins (use half for the dressing)
  • 1 apple (red or green), cut into matchsticks
  • ¼ cup pistachios, chopped
  • Salt & pepper
DRESSING:
  • 2 Tbsp olive oil
  • Juice of ½ lemon
  • Juice of ½ orange
  • Salt & pepper

INSTRUCTIONS:

  1. Prepare the fruit and vegetables: chop the dates, slice the celery, cut the apple into matchsticks, and segment the orange.
  2. Make the dressing: in a large bowl, whisk together the olive oil, lemon juice, and orange juice. Season with salt and pepper.
