Mushrooms and walnuts get roasted down with onion, garlic and a hit of soy and balsamic, then rolled into wraps and cut into rounds — think sushi logic, but with a savoury, umami-heavy filling. Skewer them, brush with garlic butter, and let the air fryer do the crisping. The avocado sauce on the side isn't an afterthought — it cuts through the richness and turns this into proper snack-plate territory. Good for sharing, good with a cold drink, good excuse to use up that spare bunch of garlic.

INGREDIENTS:

  • 200g mushrooms
  • 1 onion
  • 3 cloves garlic
  • 50g walnuts
  • 1 Tbsp soy sauce
  • 1 tsp balsamic vinegar
  • 3 wrapsSalt and pepper
  • Olive oil, for cooking
  • Skewers

GARLIC BUTTER:

  • 30g butter, melted
  • 1 clove garlic, finely grated or crushed
  • 1 tsp dried parsley

AVOCADO SAUCE:

  • 1 avocado
  • 1½ Tbsp mayonnaise
  • 1 small clove garlic
  • Juice of ½ lemon
  • Salt and pepper

INSTRUCTIONS:

  1. Preheat the oven to 200°C.
  2. Add the chopped mushrooms, roughly chopped onion, sliced garlic and walnuts to a baking tray. Season with salt and pepper, drizzle with olive oil, and toss everything together.
  3. Roast for around 25 minutes, until the vegetables are softened and starting to brown.
  4. Meanwhile, combine the melted butter, crushed garlic and dried parsley in a small bowl to make the garlic butter, and set aside.
  5. Transfer the roasted mixture to a blender or food processor. Add the soy sauce and balsamic vinegar, then blitz until combined — you want the mixture to hold together but still have a little texture.
  6. Divide the mushroom mixture between the three wraps and spread evenly. Roll the wraps up tightly, then cut into thick rounds.
  7. Thread the rounds onto skewers and brush generously with the garlic butter.
  8. Cook in the air fryer at 190°C for 10–15 minutes, or until golden and crispy around the edges.
  9. For the avocado sauce, add the avocado, mayonnaise, garlic, lemon juice, salt and pepper to a blender and blitz until smooth and creamy.
  10. Serve the warm mushroom roll-ups with the avocado sauce for dipping or drizzling.
