This Japanese strawberry sandwich has become the internet’s go-to no-bake treat and it’s as easy to make as it is satisfying to slice. Just soft brioche, whipped cream, and fresh strawberries, layered and chilled for that clean cross-section reveal. No piping bags, no stress, just a smart way to show off good fruit and clear a punnet in style.

INGREDIENTS:

  • 10–12 strawberries (depending on size)
  • 4 slices fresh brioche bread
  • 200ml double cream
  • ½ Tbsp icing sugar

INSTRUCTIONS:

  1. Add the cream and icing sugar to a bowl. Whip until firm peaks form.
  2. Lay one slice of brioche on a clean surface and spread a thick layer of whipped cream across the surface.
  3. Arrange 3–4 strawberries in a straight line across the centre. Add 1–2 extra strawberries on either side to fill the shape out.
  4. Cover the strawberries completely with more whipped cream, pressing gently to fill any gaps.
  5. Top with the second slice of brioche. Smooth the sides with a butter knife or palette knife, wiping away any excess cream.
  6. To help with slicing, place a chopstick or spoon across the top to mark the direction of the strawberry line.
  7. Cover the sandwich with a bowl or wrap loosely, and refrigerate for 20–30 minutes until firm.
  8. Once chilled, slice carefully along the marked line to reveal the strawberry cross-section. Enjoy immediately.
