The best part of any festive meal? A dazzling dessert to finish it off. And in true Wonky style, we're going for an Eton Mess. It's like a Pavlova...but wonky! And a delicious solution for any meringues that don't quite go to plan.

The wonderfully wonky meringues in our Wonky Christmas Box might not have made the supermarket shelves, but they're destined for dessert greatness! A little lopsided but full of charm, they're perfect for this festive Eton mess recipe. We've paired them with Farmers Wife Lemon Curd straight from Otago, and topped it all off with rescued seasonal berries.

INGREDIENTS

  • 1 bag of mini meringues 
  • 1 punnet blueberries
  • 300ml whipping cream
  • 1 jar lemon curd
  • 25g cold chocolate (optional)

METHOD

1. Prepare the Lemon Curd Cream

  • Whip the cream to soft, pillowy peaks
  • Gently fold in two tablespoons of Farmers Wife Lemon Curd until just combined (careful not to overmix!)

2. Build Your Festive Layers

  • Start with a generous layer of your lemon cream on a serving platter
  • Add little dollops of extra lemon curd for bursts of citrus
  • Crumble your wonky meringues over the cream
  • Scatter fresh blueberries across the layer
  • Repeat these lovely layers until you've used everything up
  • Crown your creation with a final sprinkle of blueberries

3. Add Some Chocolate Shards

  • Using a vegetable peeler, shave the white chocolate over the top of the Eton mess, creating delicate shards.

4. Serve!

  • Serve extra lemon curd on the side in a small bowl if you have any leftovers.

Tip: This dessert is best assembled just before serving to keep the meringues crisp!
