Baking tray of crispy roasted potatoes

Nothing quite beats a crispy-on-the-outside, fluffy-on-the-inside roasted potato—and this recipe is our fail-proof, not-so-secret method to achieving exactly that!

This crispy roast potato side dish works best with a starchier potato variety, like agria, as their lower moisture content helps them reach the perfect fluffy texture we all know and love.

Boiling the potatoes first (known as par-boiling) and giving them a good jostle in the pan is also a step not to be skipped. This process softens the outer layer of the potatoes, creating a rough, starchy surface. When these rough edges hit the hot oil in the oven, they crisp up beautifully, giving you those irresistible crunchy bits on the outside while keeping the insides soft.

Enjoy these potato roasties served alongside any protein and a fresh, green salad.

INGREDIENTS:

  • 700g Potatoes - a starchy variety is best, like Agria or Yellow Fransica potatoes
  • 2 Tbsp plain flour 
  • Cooking oil
  • Salt 
  • Dried herb of your choice - rosemary, thyme, Mixed Italian herbs, or oregano all work well (optional) 

INSTRUCTIONS:

  1. Preheat the oven to 200°C
  2. Cut the potatoes in half or into quarters depending on the size of the potato.
  3. Place the potatoes into a pot of cold salted water. Cover the pot with a lid and bring to the boil. Once boiling, cook the potatoes for 8-10 minutes. 
  4. Remove the potatoes from the heat and drain. Transfer the drained potatoes back into the pot.
  5. Sprinkle the plain flour over the potatoes and shake the pot to coat the potatoes. This will give those lovely crispy edges. 

If roasting in the oven: 

  1. Pour a generous amount of oil onto a baking tray and place the baking tray into the oven to heat the oil for 10 minutes. When the oil is hot, carefully transfer the potatoes onto the tray, gently tossing the potatoes to coat the potatoes in oil. 
  2. Bake in the oven for 25-30 minutes or until golden brown and crispy, turning the potatoes at intervals turning the cooking.

If using the air fryer: 

  1. Preheat the air fryer to 200°C. Toss the floured potatoes in oil and cook for 15- 20 minutes until golden and crispy. Shake the airfryer drawer at intervals during cooking.

Remove the potatoes from the air fryer or oven and sprinkle with salt and dried rosemary, thyme or oregano to finish. Enjoy with...well, anything really!
