Whoever gave Brussels sprouts a bad rep, has clearly never tried these crispy and delicious Brussels sprout "wings" - a great vegetarian snack alternative.

Bread-crumbing the Brussels sprouts is one of our favourite ways to add texture to this humble veggie staple, and is a great technique when you've got sprouts looking a bit sad in the fridge. Serve them tossed in our home made spicy hot sauce to enjoy as a snack, sharing plate or even a side dish.

INGREDIENTS:

THE "WINGS":

  • 8 Brussels sprouts
  • 1 cup plant-based milk
  • 2 cups breadcrumbs
  • 1 Tbsp vinegar
  • 1 cup flour
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp mixed herbs
  • Salt and pepper

HOT SAUCE:

  • 1/2 cup sriracha
  • 2 cloves garlic, crushed
  • 1 Tbsp maple syrup
  • 1/2 Tbsp soy sauce
  • 3 Tbsp aioli

INSTRUCTIONS:

  1. Preheat oven to 180°C
  2. Trim the very bottom of the sprouts off and remove any loose hanging leaves. If the sprouts are large, cut them in half. If the sprouts are small, you can leave them whole.
  3. Gather 3 bowls for your different crumbing elements.
  4. In the first bowl, make the flour mixture. Add the flour, garlic powder, smoked paprika, salt, mixed herbs, and pepper. Mix well.
  5. In the second bowl, add the milk and vinegar. It will begin to curdle and thicken slightly after a few minutes - don't be alarmed, this is what we want!
  6. In the third bowl, add the breadcrumbs.
  7. Crumb your sprouts: Roll the Brussels sprouts into the flour mixture to coat each piece evenly, then dip them into the milk mixture. Toss the Brussels sprouts in the breadcrumbs using your hands to pack on the breadcrumbs. This is best done in batches. Repeat until each sprout is crumbed.
  8. Place the crumbed sprouts onto a baking tray and drizzle with oil. Bake for 30 minutes until golden brown.
  9. While the sprouts are cooking, make your hot sauce. Combine the sriracha, crushed garlic, maple syrup, and soy sauce in a bowl. Keep the aioli separate.
  10. Remove the sprouts from the oven and place them into the bowl with the hot sauce. Gently toss to coat the Brussels sprouts in the hot sauce.
  11. Enjoy immediately with your favourite aioli.
