Turn your leftover Christmas ham, grazing board bits, and wonky vegetables into delicious tarts. This recipe is perfect for easy, breezy Boxing Day snacking and great for reducing your food waste too.

Ingredients:

  • 1 large puff pastry sheet
  • 1 egg
  • A stash of your favourite leftovers

Topping Combinations To Try:

  • Roasted beetroot, goats’ cheese, and macadamia nuts
  • Asparagus, brie cheese and chutney
  • Strawberries, chocolate, pistachios
  • Tomato, cheese, salami, and basil
  • Cheese, ham and stone fruit and honey
  • Carrot top pesto, carrots, and zucchini
  • Get creative with any other favourites from your Wonky Box of course!

Instructions:

  1. Preheat the oven to 200°C degrees and line a large baking tray with baking paper
  2. Cut the pastry into 6 or 8 square tartlets, depending on the size
  3. Place toppings of your choice onto the pastry leaving a gap around the edge
  4. Once all the tarts have been filled, brush the edges of the pastry with egg wash to help them brown up. Season with salt and pepper.
  5. Cook for 20 minutes in preheated oven until golden and crispy

Optional* Garnish with fresh herbs if you have them for an extra flavour boost - Basil, Parsley, Mint and Thyme all work well.
